Start boiling cold water in medium-sized pot large enough to cover eggs by 2+ inches) Prick eggs; and put in water (no need to cover pot yet) Add some salt (for temp and cooking of proteins) When water hits hard boil, shut flame and cover pot Let sit for 10 mins (for XL eggs); (+/- 1 min) less for L eggs; more for Jumbo eggs. This will make eggs hard-boiled; just past the Japanese noodle egg. |
